The vines are pruned in January and February, using the "cordon speronato" method.

In the summer several bunches of unripened grapes from each vine are removed, therefore limiting the yield per vine, but giving a greater concentration of ripeness and higher quality of wine. The harvest takes place at the end of September or beginning of October.

Sugar levels are rigorously checked with Marco Chellini, the enologist,in all areas of the vineyards,in order to harvest the grapes at exactly the right moment.
